Chef Gilmore comes from a military background and after serving in two wars, he started his own business. The passion that helped him start his own business comes from his childhood love of cooking and food. He also loved going into restaurants and seeing different people’s reactions to the food they get the plate of food in front of them, and the joy and different expressions emerge.
The inspiration to go into culinary arts actually came from his younger brother, who he helped influence to into culinary arts as well, and how his brother drove his passion into a completely different direction than himself. Seeing how his brother started out with the same interest of culinary arts and then how his hard work and efforts lead to something amazing brought Chef Gilmore back to culinary school at Johnson and Wales in Providence, Rhode Island, to keep pursuing his passion.
Chef Gilmore is both serving in the Army and started his own business, and he says that running your own business is more difficult than being out on deployment. He says this is because to him war is straightforward, you are trained in everything you need to know and when you deploy you are doing the job that you spent all the time training for. When starting and running your own business there are too many unexpected elements that entrepreneurs have to take into effect and learn how to work around them.
One main challenge Chef Gilmore overcame while starting his own business was how he learned to manage his time. In the military he learned time management, but he says it is on a smaller scale to being a CEO or business owner. Chef Gilmore runs his business of 15 chefs, is a full time student, a full time father and is serving in the Army Reserves. There is a lot on his plate and time management is a key factor in every moment that he has.
The motivation that drives him is his family, especially his children. He wants to be an example, and show how hard work, dedication, focus, education and smart investments can help you reach your own achievements and goals in life. In two years Chef Gilmore’s vision is to have the Chef Gilmore & Co. cover the majority of the east coast, and in five years cover the entire United States.
